Ingredients
2 lbs. of sweet potatoes
1/2 cup of brown sugar
1 cup of water
1 orange
2 tsp. of vanilla extract
1 tbsp. of butter
2 tsp. of cinnamon
1 tsp. of nutmeg
Pinch of salt
Pinch of black pepper
Directions
Peel and cut potatoes into thick slices. Then add 1/2 a cup of water and sugar to pan. Add vanilla extract, cinnamon, nutmeg, salt, pepper and pepper. Next squeeze juice from orange into pan. Turn heat on to medium high and cook for 20 to 25 minutes, stirring constantly and checking comsistency of syrup. When syrup is thick and bubbly turn heat down to medium low then add sweet potatoes. Stir sweet potatoes until they are evenly coated with the syrup. Add 1/2 of a cup of water and stir again. Cover pan and cook potates for 20 to 25 minutes. Stir every 5 minutes. The sweet potatoes are done when they are soft yet still firm. You should be able to cut through them with your cooking spoon.
