Oooh Wee! Wings

These are hands down the best wings I've ever had in my life. This sauce is so good I might start selling it. I don't really brag on myself but I did my big one with this recipe. My family loved them so much that I had to make them two nights in a row. Your family is going to love them too. The sauce has one of my favorite flavor combinations; orange, ginger, and garlic. Those flavors are enhanced by browning these ingredients in butter before making the sauce. It adds depth and complexity that elevates this from just another chicken wing sauce to a gourmet sauce that has multiple applications.


The flavors are well balanced. Salty, sweet, acidic, and spicy. Baking them in the sauce makes the wings tender and moist, slipping right off the bone. In my humble opinion, I believe that I've created the perfect wing and this recipe is now a staple in my home. Once you try it, it'll be a favorite for you and your family also.


Ingredients


3-4 lbs chicken wings

Juice from 1 orange or 2 mandarins

Zest of 1 orange or 2 mandarins

7-10 cloves of garlic, minced

4 tbsp of ginger paste

2 tbsp butter

1/4 cup of cane syrup or molasses

2 tbsp rice vinegar

1 tbsp whiskey

1 pack of Sazon

2 tsp salt

2 tsp garlic powder

2 tsp onion powder

2 tsp smoked paprika

2 tsp nutmeg

2 tsp ginger powder

1 tsp cayenne pepper

1 tsp white pepper


Instructions


  1. Cut wings into two parts at the joints and discard the tips. Season with 1 tsp of salt and 1 tsp of white pepper. Set aside.

  2. Preheat oven to 375° F

  3. Finely mince garlic and set aside

  4. Using a grater, grate orange or mandarin skins to make zest.

  5. Add 1 tablespoon of butter to a pan on medium heat and melt. Then add zest to pan. Cook and stir for 5 minutes.

  6. Add ginger paste to pan. Stir for 5 minutes.

  7. Add garlic and 1 tablespoon of butter to pan. Cook until golden brown and slightly crispy and toasted, about 7 minutes. Stir occasionally.

  8. Turn off heat and add 2 tbsp of ginger paste and stir into paste.

  9. Add zest, ginger, and garlic to a mixing bowl. Squeeze juice from orange or mandarins into the bowl.

  10. Add cane syrup or molasses, rice vinegar, whiskey, salt, Sazon, garlic powder, onion powder, smoked paprika, nutmeg, ginger, and cayenne to bowl. Whisk together until thoroughly blended.

  11. Place wings in a large baking dish and pour sauce onto them. Rub sauce in until equally coated.

  12. Place baking dish in oven uncovered. Bake wings for 25-30 minutes, flip them, and then let them bake for another 25-30 minutes.

  13. Remove dish from oven and baste wings with sauce.

  14. Serve hot and enjoy!
