Ingredients
1 bunch of collard greens
1 onion
1 bell pepper
2 stalks of celery
1 tbsp. of minced garlic
1 bay leaf
2 tsp. of butter or cooking oil
2 tsp. of Cajun seasoning
2 cups of water
Directions
Soak collard greens in water and baking soda. Rinse the greens and then chop them. Next chop the onion, bell pepper, celery, and bacon. Add butter or oil to stockpot and warm on medium heat. Then add onion, bell pepper, celery, garlic, and bacon to pot and cook for 15 minutes. Add collard greens and water to pot. Let cook for 20 minutes on medium heat then add Cajun seasoning and bay leaf. Cover pot and cook for 90 minutes.
