Salmon Patties

Growing up this was one of my favorite meals that my mother would make for me and my five siblings. It wasn't until I was much older that I learned that this was considered to be a struggle meal. My mother made this when she was either low on cash, low on energy, or both. Even though it was inexpensive, the way she seasoned it made seem like a gourmet meal to me. I'm far from struggling but being a SAHM who cooks 3 meals a day, sometimes I need something that's fast, filling, and nutritious. This is a go to for the times when I don't want to spend hours in the kitchen but am tired of takeout. I served this with red rice, corn, and salad. It was a hit with my family and I'm sure yours will love it also. If you have a big family this recipe is eay to double or triple.



Ingredients


1 can of salmon

1 egg

1/4 cup chopped seasoning blend (onion, bell pepper, celery)

1 tbs minced garlic

2 tsp yellow mustard

1/2 tsp salt

1 tsp onion powder

1 tsp garlic powder

1/2 tsp smoked paprika

1/2 tsp cayenne pepper

1/4 tsp liquid seafood boil (optional)

Hot sauce to taste (optional)

1/4 cup oil for frying


Instructions


  1. Open can of salmon and drain liquid.

  2. Add salmon and all ingredients except the oil to a mixing bowl. Stir until completely blended.

  3. Scoop about 1/3 cup of mixture into hands and shape into patties.

  4. Pour oil into pan and heat to 300°F.

  5. Add salmon patties to pan and cook on each side for 4 minutes.

  6. Remove from pan and drain on paper towels.

  7. Serve immediately with grits, fries, or rice and enjoy!
